Elderflower Cupcakes

I was intrigued by Meghan and Harry’s (the Royal outcast’s) wedding cake flavor, so I had to try. So why not make cupcakes? You can get Elderflower liqueur at any liquor store (Lee’s in Las Vegas has it) and it’s good to have on hand in the summer as it makes any drink refreshing.

• 1 cup nut milk
• 1 tsp Apple cider vinegar
  • Stir together set aside (makes vegan buttermilk)
• 1/2 cup vegan butter
• 1 cup sugar
  • Cream together well 
  • Mix in 
• Zest of one lemon
• 1 tbs elderflower cordial
• 8 oz self rising flour 
• 1.5 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• Add milk vinegar mix
  • Add to cupcake tin (lined with cupcake cups) and Bake 30 mins
• Juice one lemon
• 1 tbs elderflower cordial
• 1.5 oz sugar
  • Heat and brush on cupcakes once out of oven
• Frosting and filling
• 1.5 cups vegan butter
• 1 tbs elderflower cordial
• 16 oz confectioners sugar 
• Juice of small lemon
