Why not bake some royal scones? I loved them!
- 1.5 cups flour
- 1/4 cup granulated sugar or monk fruit sugar (no calorie)
- 1 egg replacer (Just Egg or Flax Egg)
- 1/2 tbs Baking Powder
- 1/4 tsp salt
- 1/4 cup vegan butter, cubed
- 1/2 cup coconut cream (or vegan cream. or even oatmilk yogurt)
- 1/2 cup raisins
- plant milk and finishing sugar to brush (sugar is optional)
Preheat oven to 375
Sift together, meaning run through a screen of some kind, flour, sugar, salt and baking powder. Hopefully, it ends up in a bowl. Add the raisins and the cubed butter. Gush it in between. your fingers, getting all crazy with it until the dough is crumbly.
Mix choice of egg replacer with choice of fat (cream)
Add egg mixture to flour and knead the hell out of it. And I mean it.
Roll out some parchment paper, not foil, not newspaper, not your divorce papers, parchment paper, the size the pan you are going to be using.
Now, I have a cutsie kitchen ring set, that has all kinds of metal rings in all kinds of sizes for cutting out cookies, using as a form, etc, If you don’t you can wing it.
Roll out the dough on a floured cutting board until it’s one inch thick. Men, use a ruler, or ask a woman, as often your idea of an inch can be skewed.
Now, if you have a handy circular ring, use the largest or 6″ diameter and make two 6″ circles. If you don’t have a ring mold, then do your best to make two 6″ across circles about 1″ thick.
Cut the circles in halves, and then cut there halves in half, or, quarter the circle.
Top the scones with a brushing of oat milk and a little finishing sugar (larger decorative sugar that doesn’t melt when baked). Bake for 20 mins or until golden and delicious.
Serve with tea or you’re a Barbarian. I mean coffee would be OK, if you must be an uncivilized beast of a thing.
